Another famous dish from the Latium region, Amatriciana sauce is made from pork cheek sautéed in extra virgin olive oil and simmered with dry white wine, tomato sauce and a pinch of salt. “Gricia” sauce is considered to be the forerunner of Amatriciana sauce, since it is very similar but without the tomato. There is an original recipe which has been made official by the town of Amatrice, however there are now different versions of the recipe in different areas. We have developed a recipe similar to that which is best known in Italy and abroad, using the highest quality ingredients. We use the finest tomatoes from Emilia-Romagna, with the addition of other high-quality ingredients such as 100% Italian extra-virgin olive oil and Cervia sea salt, to allow you to serve up tasty pasta dishes with personality.
