A typical product from the region around Bologna and Modena, our cooked mountain pesto is prepared with lard, salt, garlic and rosemary. Gently warmed in a pan or bain-marie, it will fill your kitchen with a delicious fragrance. Its taste combines perfectly with other traditional products from these areas, tigelle and borlenghi. Our cooked mountain pesto has many other potential uses however – you just need a little imagination!
Sold ready to eat, our pesto is ideal for filling traditional “tigelle” or “borlenghi”, with a sprinkle of Parmesan cheese. Heat in a pan or bain-marie. After warming, thin it out with a little cooking water and use it as a rustic sauce to dress short pasta, gnocchi or tagliatelle. Add grated Parmesan cheese to finish.
This product is also great when used to prepare roasted potatoes. First, put small quantities of Pesto in the baking tray and on the potatoes. Remember to turn during cooking, and if you like you can add more rosemary to taste. Finally, you can spread our Cooked Mountain Pesto on all kinds of meats for a really tasty roast.
