We have put two of the highest quality products of our area into a jar: artichokes and Balsamic Vinegar of Modena PGI. Picked only when fully ripe, our artichokes are always cleaned, cut and carefully sealed in jars to preserve their excellent taste and crunchiness, to satisfy every palate. Thanks to the sweetness and fragrance of Balsamic Vinegar of Modena, this is one of the most popular products in our range.
The crunchiness and the natural flavour of our artichokes, given by preserving them in oil, makes our product suitable for many different quick and tasty uses, such as appetizers, side-dishes and hot recipes.
This side-dish has always been traditionally combined with typical Emilian cold cuts. Drain the artichokes from their oil for a few minutes. Grill them and add a pinch of salt and you will obtain a tasty side-dish for grilled meat and fish. Otherwise, you can sauté them in a pan with a little bit of extra virgin olive oil. Add salt and a sprig of rosemary and other aromatic herbs to taste. Serve them as a side-dish or a starter, covered with some Parmesan shavings.
Salsa Rossa, or red sauce, is a vegetable sauce typical of Emilian culinary tradition: refined red vegetables of the highest quality, which are processed just after they are picked, to give this product a sweet and strong taste.
This product is made with fresh, ripe artichokes. The taste is enhanced by the sweet and sour notes of Balsamic Vinegar of Modena, which maintains all the natural and fresh flavours of genuine artichokes.
